N°10 BROWN STOCK
the cooking stock - lightly-thickening
Versatile and convenient, not salty, lightly thickening, granulated form. Its character enables it to be used both in a granule form that dissolves in hot water and as a base to prepare exquisite sauces, classic or creative, to accompany red, white or game meat. Its unique texture is also recommended to stretch cooking stocks and enrich the flavour of soups, risottos, sauces and gravies.
How to use
Basic sauce: Add 100/120g of product to one litre of boiling water and leave to simmer for a few minutes. (one spoonful 10/12g per 100ml of water). The thickness can be increased by adding some potato starch or flour or better still, some Well Roux.
Classic and creative sauces: add the basic sauce to other ingredients such as sautéed vegetables, wine, cream, mushrooms, rosemary etc.
To stretch the cooking stocks for roasts, braised meat: add the basic sauce or the powder form as it is either before or during cooking.
To give body and flavour to soups, risottos, sauces: add the basic sauce or the product in its granule form during cooking until the intensity of flavour desired is reached.
Potato maltodextrin, wheat flour, flavour enhancers: monosodium glutamate, disodium inosinate, ,disodium guanylate. Partially hydrogenated palm oil, salt, meat extract, flavourings (containing soya), colouring: plain caramel. Yeast extract, dehydrated vegetables (onion, carrots, garlic, tomato, parsley), thickener: xanthan gum. Spices, acidity corrector: lactic acid, antioxidant: rosemary extract.
