N° 21 BROWN STOCK
the non-thickening meat stock
High quality Brown meat stock, free from allergens such as gluten and lactose. A good light cooking product attentive to new trends and the needs of the most demanding members of the public. An unthickened stock for creating classic gravies and new specialities for red meat, white meat and game, fillings and meat-based main course dishes, also usable as a dressing. It brings out the full-bodied character and flavour of risottos, sauces and soups.
How to use
For gravy: add 65g of product (about 5-6 spoonfuls) to a litre of water and allow to simmer for one minute. For a more concentrated gravy increase the amount of product up to 100g/litre. To thicken the gravy, before bringing to the boil, add some potato starch or cornflour or even better, some Well Roux.
Dressing: depending on the intensity of the flavour required add a few grams, up to 6-7g of product per portion.
Potato maltodextrin, flavour enhancers: monosodium glutamate, disodium inosinate, disodium guanylate. Palm oil, rice flour, vegetable fibres, natural flavourings, colouring: Ammonia caramel. Salt, dehydrated vegetables (onion, tomato, carrot, garlic), potato protein, meat extract, sugar, yeast extract, thickener: Xanthan gum, carob seed flour. Spices (pepper, bay)
