N°23 SHELLFISH BASE
The shellfish base
Superior quality shellfish stock. The product dedicated to excellence for dishes with a taste of the sea to give body and flavour to all fish and shellfish based dishes and preparations and to give full body to risottos, soups and sauces. Suitable both directly as a dressing and for making delicious sauces.
How to use
For sauce: add 80 g of product (about 6-7 spoonfuls) to a litre of water and allow to simmer for one minute. For a more concentrated sauce increase the amount of product up to 120 g/litre. To thicken the sauce, before bringing to the boil, add some potato starch or cornflour or even better, some Well Roux.
Dressing: depending on the intensity of the flavour required add a few grams, up to 8-9 g of product per portion.
Palm oil, tapioca starch, potato maltodextrin, flavour enhancer: monosodium glutamate. Shellfish (dehydrated prawns lobster extract) (10%), salt, vegetable fibres, dehydrated vegetables (tomato, onion) sugar, dehydrated cod , flavourings, colourings: plain caramel. Spices (turmeric, pepper), antioxidant: rosemary extract.
