Cream of pumpkin soup with amaretto

A unique tasting recipe thanks to Well Bouillon
- 500g peeled and washed pumpkin
- 1 spring onion
- 1 l water
- Well Granulated Bouillon N.7 Beef or Classic, Organic Classic or “Gran Aroma”)
- 50 ml fresh cream
- 20ml pumpkin seed oil
- 80g amaretti
- 30 ml extra virgin olive oil
Peel and wash the pumpkin, then cut it into small cubes. Wash and crumble the spring onion. Dry it and stew it in a saucepan with the extra virgin olive oil that we have previously heated. Add the pumpkin and sautée on a high heat. Soak with water and add the Well Granulated Bouillon N.7 Beef to give the soup a better balance of flavours.
Leave the pumpkin to simmer until it starts to form a soft pulp. Add some salt if necessary and blend everything with a mixer, adding 40ml of cream to emulsify.
Put our creamed soup into dishes or cups. Crumble the amaretti with your hands and put them in the middle of the soups. Garnish with drops of cream and a drizzle of pumpkin seed oil. Serve immediately.
